Chicken is awesome. It always taste good and it goes with any dip you may like such as BBQ sauce, Ranch or my personal fav Franks Red Hot Sauce which is pretty much good on anything. Anyway here is great recipe for baked chicken that will be what every girls wants hot and juicy.
1. Thaw boneless chicken,to be really healthy it should be skinless but if want the skin, whatever keep it. To keep it on the cheap, go to the store on Sunday, or when they are advertising "cheap meat". Do not look at the total price, look at what is being charged per pound. A dollar a pound is going to be the cheapest you can get and I would buy a lot of that and just freeze the rest. Its easy to buy a lot of chicken and bag it in single baggies, to thaw when you want. Anyway once you find some cheap chicken just buy a lot of it, it will last you longer than you realize
2. I would take the chicken out the night before and put from the freezer to the fridge, it will be thawed by dinner
3. Pre-heat your oven to 350 or 400 degrees if you're in a hurry
4. Rub the chicken in extra virgin Olive Oil (EVOO), don't poor it on, just lightly rub it, you only need about a tablespoon or so.
5. This should take about 40 min to an hour to cook, but it depends on the size and thickness of the meat.
6.Check every 15 min or so and drain whatever juices have drained into the bottom of your pan. This will keep the chicken moist on the inside
7. When there is about 15 min left, add some spices or marinade to add flavor to your chicken. Spices are the healthier option but marinade is delicious soooooo I'm not gunna judge.
8. Cut a slice in the middle of your chicken and if there is no pink and its looks juicy and delicious walah your dinner is served.
